This dish features two powerhouse brain-health foods, salmon and walnuts, so it’ll help power up your brain while satisfying your taste buds.
1 ½ pounds skinless wild salmon, cut into 4 pieces
¼ cup of walnuts, blended into a nut meal (some small chunks okay)
2 pinches of saffron
½ teaspoon salt
Preheat oven to 380ºF
Prepare a baking sheet with parchment paper or a thin coating of coconut oil.
Place the salmon on the baking sheet. Beat the egg in a separate bowl, and pour it over the salmon until well coated on all sides. Press it with your hands to make the egg soak into the fish
Mix the walnut meal, saffron, and salt together on a plate. Press each fillet into the walnut mixture to coat.
Place the salmon back in the backing sheet.
Bake for 7 minutes, turn the salmon over, and bake for another 7 minutes, or to your desired doneness.
