Banana Pancakes

The optional ingredients include applesauce and fresh peaches. However, this recipe surprisingly doesn’t have flour or milk in it.

  1. Preheat electric skillet to medium or frying over medium heat. (Lightly coat with cooking spray if needed.)
  2. In a food processor or blender combine eggs, banana, and a pinch of nutmeg.
  3. Pour batter on to skillet splitting it among 3 cakes.
  4. Cook until bubbles begin to form on top of the cakes and they begin to solidify, and flip them over and cook for 1 minute.
  5. Remove from skillet and top with cinnamon and/or applesauce.
