This recipe has ingredients to make your mouth water: cherry tomatoes, ricotta cheese, penne pasta, mushrooms, garlic and basil. You can also throw a little salt and pepper in there to your liking.
This simplified, five star recipe only takes 20 minutes to complete. After you’ve gathered your ingredients, you can start by cooking the pasta. Follow the directions as written on the box. In a pasta pot, take some time to saute the mushrooms and tomatoes. You’ll know it’s finished by the slightly brown coloring of the mushrooms. Another tell-tale-sign is the slight shriveling of the tomatoes.
Once the pasta and the tomatoes/ mushrooms are finished, you can move on to the next step. Combine the pasta, tomatoes/ mushrooms mix, garlic and ricotta. Take a few basil leaves and crush enough for 1 tbs. Salt and pepper the dish to your tasting. Stir this mix with a gentle hand for about two minutes. Once this step is complete your dish is ready for serving.

- 5oz Cherry Tomatoes
- 1/2 cup Ricotta
- 8oz Penne Pasta
- 6 Medium Size Mushrooms sliced
- 1 tsp. Minced Garlic
- Fresh Basil
- Cook pasta according to box directions and set aside. Use the pasta pot and lightly saute the mushrooms and tomatoes until mushrooms are lightly browned and tomatoes start to shrivel a bit. Mix in penne, garlic, ricotta, salt and pepper to taste, and tear up about 1 Tbs worth of basil. Gently stir about 2 minutes and serve!
