It is not made like your traditional BLT sandwich. In ours, the tomatoes are roasted with the onion and the bacon. This allows their flavors to marry, making this sandwich one savory dish. Whoever you serve this to is bound to love it.
Optional serving suggestions are, you can put it on top of pasta. Or you can serve it like bruschetta as an appetizer! No matter what way you serve it it is going to be delicious.
- 1 Pint of Grape Tomatoes
- 1 Medium Onion
- 1 Package of Bacon
- Fresh Basil Leaves
- 1 tsp Italian Seasoning
- Loaf of Rustic Bread
- Preheat your oven to 450 degrees. Wrap a rimmed cookie sheet with aluminum foil (to keep cleanup easy).
- Slice your onion and spread evenly over the cookie sheet. Add your washed and dried tomatoes. Season and lay bacon strips on top.
- Place in oven and cook for 25 mins or until tomatoes burst.
- Slice bread, add a couple basil leaves, add bacon strips and top with tomato & onions. Serve!
