This is a simple recipe that you can use for lemon meringue tarts or pie. There are various types of meringue. In fact, some are flavored with vanilla, almond or coconut. The three main types of meringue are French, Italian and Swiss. They each bare their own special qualities; however, what you’ll see in this recipe is more of the French styling, because it uses white sugar and egg whites.

This recipe for meringue is classic and easy to follow. It pairs wonderfully with lemon tarts.

You will only need four ingredients: egg whites, cream of tartar, sugar, and salt. It is prepared in just two steps: beat the tarter, salt and egg whites until foamy, and then beat in the sugar (1 tablespoon a time). You’ll know when it’s finished by its glossy, stiff texture.

Meringue has a delightful sweet and airy flavor. Try it on lemon pie or key lime pie. It’s also excellent paired with various other desserts.

Ingredients

  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar
  • Pinch of salt

Directions

  1. Beat egg whites, tartar, and salt until foamy.
  2. Beat in sugar, 1 tablespoon at a time and beat until glossy and stiff.
