Sweet Potato Waffle

Sweet Potato Waffle

Ingredients

  • 2 cups Bisquick/baking mix
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 egg
  • 1 ⅓ cup milk
  • 1 cup canned sweet potatoes, mashed
  • 2 tablespoons canola oil
  • Topping:
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • ½ cup pecans, chopped
  • ½ cup walnuts, chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon water
  • ⅛ ground cinnamon
  • Dash salt
  • Dash ground nutmeg
  • Maple syrup

Directions

  1. For Waffles: Mix together the Bisquick/baking mix, brown sugar, cinnamon, ginger, nutmeg, egg, milk, sweet potatoes, oil, vanilla extract into a batter.
  2. For Topping: Place butter, chopped pecans, chopped walnuts, brown sugar, water, cinnamon, salt, nutmeg, and maple syrup into a small saucepan and heat until ingredients combine.
  3. Preheat your waffle iron and spray with non-stick cooking spray. Cook waffles for 5 minutes. Plate and serve your waffles with our maple topping. Enjoy!
